         Growing up my mother has always been my best friend. It isn't a secret, heck even my sister calls me a mamas girl. As I sit here every day and watch my daughter grow all I can think is how much my mother means to me and all the wisdom she has passed on to me. A hug when I didn't win, a fresh plate of french fries when we had a hard day in the show ring, or an all night burger time video game fest to catch up on the week. 
     As I get older and try to remember what I use to do to be so fit and healthy I look back and the greatest thing was water. I know I use to enjoy the occasional soda, but it wasn't a constant in our house. We were lucky to grow up in a community with amazing water, straight from the tap was about as good as it got. My mom and I often talk about drinking water, especially this time of year when here in West Texas temperatures often reach over 100 degrees. Like any great mother she asks me probably at least once a day if I am drinking enough water, if the kids are and if my husband is.........well of course mom we couldn't forget it. Gardening in West Texas That is What I Get

      My oh my what a gardening day. I got up and out in the garden by 8 in the morning. Everyone is growing so well! My tomatoes though were getting a bit over grown. My friend over at My Side of Life told me they needed two feet of space a piece and while I couldn't listen to that point(I gave my just over a foot between them) some of them had to be moved. So I got to digging and transplanting, when I reach a hard piece of ground I got my spade out and started hacking at the ground............guess I should have moved a nearby pot......because as I was trying to transplant and dig I hit the corner. At this point I don't think it is broken enough to go in but I messed something up good :p . Here are some pictures for the garden this week.

Vanilla Chocolate Chip Muffins

    
   When I woke up this morning I just couldn't decide what would be for breakfast. As we delve into preparing to homestead the amount of pre-packaged and process food decreases which effect me the worst for breakfast. This morning I decided muffins were the way to go and well, I had Chocolate chips! 

Ingredients
  • 2 Cups of Flour
  • 2 Tablespoons of Sugar
  • 1/2 Teaspoons of Salt
  • 2 Tablespoons of Baking Powder
  • 1 Egg
  • 1 Cup of Milk
  • 1 Teaspoon of Vanilla
  • 1/2 Cup Chocolate Chips(or more if you want)

Directions


  • Mix together all your dry ingredients so they are well blended.
  • Add wet ingredients all together and mix until blended.
  • Add Chocolate Chips.
  • Bake at 350 for 15-20 minutes

     These were really good and just what I was craving this morning I hope you enjoy them!

Simply Saturday

Hmmmm........not much to say this Saturday. We were going to have our first big sell down yardsale but the weather prevented us from doing that booooo!!! We did end up finding a great deal on a solar panel set up that should be big enough to run our rv. I am really excited about that, everything we have to sell is just material and while it would be nice to get some cash for it, if it ever comes time to go what we don't need could easily find a new home. Each step closer gets me more excited and even more overwhelmed! I did sell 2 large storage containers full of stuff online though so tomorrow my goal is to refill those containers! I hope everyone has an amazing Father's Day with the ones they love.
